Ingredients
  

  • 1 cup raw cashews
  • 1/2 cup + 2 tbsp hot water (for the blender)
  • 1 1/2 tbsp nutritional yeast
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/8 tsp turmeric
  • 1 tsp salt
  • 3 tbsp salsa

Instructions
 

  • In a medium saucepan, boil the cashews in water for 30 minutes.
  • While the cashews are boiling, add all other ingredients into a high-speed blender: the hot water, nutritional yeast, lime juice, chili powder, turmeric, salt, and salsa.
  • Once the cashews are boiled, drain and add to the blender. Mix on high speed until smooth. Add salt and pepper to taste, if needed.
  • Serve warm or cold. Enjoy!

Notes

Spicy? Add a pinch of red pepper flakes to the blender ingredients for an extra kick.
Freeze: This queso cheese dip is already amazing, but the fact that you can make extra to freeze on hand for next time…is amazing. We store it in a plastic tuperware or sealable mason jar leaving an inch or two of space at the top to allow for expansion. Let thaw on counter prior to using.
Storage: We love to store our cheese dip in a sealable mason jar or plastic container. Store in refrigerator for up to a week.
