Who doesn’t like a quick, protein-filled, easy meal prep recipe for the week ahead?! I usually make a double batch and just change up the toppings depending on my mood or what needs to be used up in the fridge. The base is solid enough to support whatever you throw at it. I love bulking up the veggies and sometimes use pickled onions, cabbage slaw, extra avocado, jalapeños, roasted cauliflower, or Brussels sprouts!

What Makes This Bowl So Good?

There’s something about the combination of sweet potatoes and taco-seasoned ground beef that just works. The sweet potatoes get beautifully roasted and caramelized while the beef is cooked with my yummy homemade taco seasoning for a savory, slightly smoky flavor.

Then you add roasted broccoli and any other extra veggies, creamy avocado for healthy fats, and fresh cilantro, lime, and shallots to brighten everything up. And honestly, don’t skip the lime! That little squeeze of fresh lime juice at the end brings all of the flavors together. If you love a little sweet heat, a drizzle of my hot honey takes these bowls to the next level!

Easy Ways to Customize Your Bowl

This is one of those recipes where you really don’t have to follow the rules. Use the basic combination of protein + roasted veggies + toppings and make it however you like. I love meals like this because they feel fresh and satisfying without being complicated. You get protein, vegetables, and plenty of flavor all in one bowl. The possibilities are pretty much endless, but some of our favorites are:

  • Switch up the protein: ground beef, ground turkey, ground chicken, steak, tofu, or shredded chicken.
  • Add more veggies: bell peppers, onion, cauliflower, corn, zucchini, shredded cabbage, jalapenos, black beans, cherry tomatoes, roasted carrots, and Brussel sprouts.
  • Try different toppings: avocado, cottage cheese, Pico de gallo or salsa, pickled onions, hot sauce, and dairy-free cheese or sour cream. And the drizzle of hot honey is always needed!

How to Meal Prep Sweet Potato Beef Bowls

These bowls are made for meal prepping! You can prepare the beef and roasted vegetables ahead of time, divide everything into individual containers, and have easy lunches or dinners ready to go.

Here’s how I like to prep them:

  1. Roast a large batch of sweet potatoes and broccoli.
  2. Cook the ground beef with homemade taco seasoning.
  3. Divide the beef and vegetables between meal-prep containers.
  4. Store fresh toppings separately and add them just before serving.
  5. When you’re ready to eat, reheat the beef and vegetables until warmed through, then add the fresh toppings.

This is a great way to make busy weekdays easier without relying on the same boring meal every day.

Ingredients

  • 2 sweet potatoes peeled and cubed to bite-sized
  • 4 cups broccoli florets
  • 1 tsp salt
  • 1 tsp ground pepper
  • 4 tsp olive oil
  • 3 tbsp homemade taco seasoning (see recipe)
  • 1 lb 95% lean ground beef or turkey, chicken, veggie crumbles
  • 1 avocado
  • 1/4 cup cilantro
  • 2 tbsp hot honey (see recipe)
  • 1 lime
  • 2 cups cottage cheese or dairy-free (optional)

Instructions

  • Preheat the oven to 425F degrees. Prepare a large baking sheet with parchment paper. In a medium sized bowl, add the cubed sweet potatoes and drizzle with half the oil and half the salt and pepper. Toss with hands or a spoon and spread out on the baking sheet in a single layer. Bake for 15 minutes.
  • While the sweet potatoes cook, prepare the broccoli in the same bowl. Toss the broccoli with remaining oil, salt, and pepper.
  • Remove the sweet potatoes and flip them over while also pushing them to one side of the baking sheet. Add the broccoli in a single layer to the other half. Bake for another 15 minutes or until sweet potatoes are lightly browned and broccoli is crisp and slightly charred.
  • As the vegetables bake, cook the ground beef or whatever meat you're using. Heat a skillet over medium high heat and drizzle with a little oil. Once heated, add the ground beef and taco seasoning, stirring and breaking the meat apart while it cooks for about 7-10 minutes.
  • Assemble the bowls:
  • Grab a bowl or container if you're meal prepping and add sweet potatoes, broccoli, ground beef, cottage cheese(optional), and some avocado chunks. Drizzle with hot honey, fresh cilantro, and a little lime juice.
