It has all the flavor and comfort of a loaded burrito, but in a fresh, customizable bowl that works for just about everyone at the table. These Gluten-Free Burrito Bowls are hearty, colorful, and packed with simple ingredients you probably already have in your kitchen. They’re great for meal prep and a fun way to change up taco or burrito night!

Why We Love These Bowls
Family friendly – These bowls are a regular on our meal plan for a reason. Everyone in our house loves Mexican cuisine, especially when it’s a build-you-own kind of meal. You can make the rice bowls just as I have or customize the toppings to whatever your family likes best.
Easy weeknight dinner – You only need about 30 minutes! Start by grabbing your salsa jar, making your own, or throw together this fresh Pico De Gallo and set aside, while you make the ground beef taco filling. This Easy Mexican Rice will take about the same amount of time to cook as the ground beef taco mixture will. Then, combine it all in a bowl and dinner complete!
Meal prep – I like to make these taco or burrito bowls on a Sunday and then store each item separately so I have dinner or lunch ready to go for a few days during the week. It saves our family a ton of time during busy days. This Gluten-Free Enchilada Casserole is another great option for meal prep.

What Goes in a Gluten-Free Burrito Bowl
The beauty of burrito bowls is that there’s no strict rule. You build them with layers of flavor and texture. Here’s a simple bowl idea with swaps & variations we love:
Base:
- Mexican rice, cilantro lime rice or plain rice
- Cauliflower rice (for a lower-carb option)
Protein:
- Seasoned ground beef, turkey, or chicken
- Thinly sliced skirt steak
- Grilled chicken
- Shredded pork
- Black beans or pinto beans (plant-based option)
Veggies & Toppings:
- Lettuce or shredded cabbage
- Fresh cilantro and lime wedges
- Salsa or this homemade Pico de Gallo
- Diced onions and bell peppers
- Corn, olives, cherry tomatoes
- Avocado or guacamole
- Sour cream or Greek yogurt (optional or dairy-free alternative)
- Shredded cheese (optional or dairy-free alternative)

Make Ahead Tips and Storage
If you’re meal prepping or have leftovers, you can either store everything together in individual containers or keep everything separate and assemble it when you’re ready to eat it. Everything will stay good for up to a week in the refrigerator.
If you want to double this recipe, both the ground beef and Mexican rice can be frozen for up to 3 months. When you’re ready to use them, just let them thaw in the refrigerator overnight and reheat them in the microwave or on the stove over medium heat.

Easy Gluten-Free Burrito Bowls
Ingredients
Burrito Bowl Base:
- 1 lb ground beef, chicken, or turkey (thinly sliced skirt steak works too)
- 3-4 tbsp gluten-free taco/fajita seasoning mix
- 2 cups gluten-free Mexican rice (our go-to, easy recipe)
Toppings:
- fresh Pico de Gallo or salsa
- onion diced
- cilantro diced
- tomatoes diced
- lettuce thinly sliced
- corn
- olives
- lime wedges
- shredded cheese (dairy-free or not)
- sour cream (dairy-free or not)
Instructions
- Start your Mexican Rice following recipe directions.
- Start your fresh Pico De Gallo or grab your jar of salsa. Set aside.
- In a large skillet over medium heat, add the ground beef and taco seasoning. Cook, breaking the meat into small pieces, until the meat is cooked through, 5-7 minutes. Taste and add extra taco seasoning to taste, if needed.
Assemble your bowls:
- Fill each bowl with a base layer of Mexican rice, taco meat, beans, fresh Pico de Gallo, and any other toppings you wish and add your favorite tortillas chips on the side. These bowls are completely customizable to your liking.
