Gluten-Free Pasta Caesar Salad
This dairy-free + gluten-free Pasta Caesar Salad is simple, flavorful, and family-friendly. Tender gluten-free pasta gets tossed with crisp romaine and a creamy dairy-free Caesar dressing for that classic flavor we all love—just made in a way that works for our family. It’s perfect for busy weeknights, potlucks, meal prep, and hot summer days when you want something hearty, but simple.
Ingredients
- 1 cup Caesar dressing homemade or store-bought (*see note)
- 4 pieces of bacon cooked
- 1 lb skinless, boneless chicken breasts
- 1 head romaine lettuce
- 16 oz gluten-free pasta
- 1 cup cherry tomatoes halved
- 1 lemon
- salt & pepper to taste
Instructions
- Pasta: Just cook pasta according to package directions. Rinse, drain, and set aside to cool.
- Chicken: Season chicken with salt & pepper and then grill for about 8 minutes on each side or until no longer pink inside. Let cool slightly, then chop into cube size pieces and set aside.
- Assemble the Salad in a large bowl: Once pasta has cooled, add chicken, pasta, bacon, lettuce, and tomatoes. Next, pour the dressing in and mix well to evenly coat everything. If needed, season to taste with salt, pepper, and a squeeze of fresh lemon juice.
Notes
Dressing: You can buy store-bought dressing or make simple homemade dairy-free Caesar Dressing here.
Pasta: You can use any variety of pasta, but we love to use Banza gluten-free pasta!
Storage for extra homemade dressing: Store in a airtight mason jar for a couple weeks in the refrigerator. This is my homemade Caesar dressing that can be used anytime on salads. Enjoy!
