Riley’s Healthy Snickers (Gluten-Free and Dairy-Free)

They’re naturally gluten-free and dairy-free, made with wholesome ingredients, and taste just as incredible as the candy bar we all love.

Fun fact: This recipe was actually created by my daughter, Riley! She wanted a sweet treat made with ingredients we already had in the kitchen, and after a little experimenting, these delicious homemade bars were born. They’re now a family favorite and disappear quickly every time we make them.

These bars have everything you love about a Snickers: a soft base, crunchy peanuts, and a rich chocolate topping with just a little salt. But instead of a laundry list of processed ingredients, they’re made with only 7 simple ingredients you.

They’re sweetened with maple syrup, packed with peanut butter flavor, and dipped in melted chocolate. The texture is chewy, slightly crunchy, and the perfect combo of chocolate and peanut butter without the guilt or calories of the normal candy bar.

A Fun Recipe to Make Together

It’s the perfect kid-friendly recipe because it’s simple, quick, and mostly just mixing and layering. You can’t mess these bars up and they don’t have to be made perfectly. Kids love helping press the base into the pan and sprinkling the peanuts on top before the chocolate layer goes on. Make memories in the kitchen with your kids while teaching them life skills.

I don’t know about you, but I LOVE a Snickers bar. It’s always been my go-to chocolate bar, however, I don’t like the laundry list of ingredients or calories. These Healthy Snickers are my saving grace. I haven’t had a Snickers in years because these taste WAY better. It’s the kind of treat that feels indulgent but is made with ingredients you can feel good about. We love them for an afternoon snack, a lunchbox surprise, or a quick sweet bite after dinner.

Gluten-Free & Dairy-Free Healthy Snickers

Ingredients
  

Crust Layer:

  • 1 cup almond flour
  • 3 tbsp maple syrup or honey
  • 1/4 tsp sea salt

Caramel Layer:

  • 1/3 cup peanut butter
  • 3 tbsp maple syrup or honey
  • 1/4 tsp sea salt

Other Ingredients:

  • 1-2 handfuls of peanuts
  • 8 oz dark or semi-sweet chocolate (dairy-free or not)
  • 2 tsp coconut oil

Instructions
 

Crust Layer:

  • In a small bowl, mix all the crust ingredients together until well combined & sticky. Add extra syrup or flour, if needed.
  • Line a loaf pan with parchment paper and press the crust mixture into the pan and smooth.

Caramel Layer:

  • In a small bowl, mix all the caramel ingredients together and spread over the crust. Next, press the peanuts into the caramel. Set into the freezer until firm, up to two hours or more.
  • After the layers are firm, remove from freezer and slice into 8 bars or whatever size you'd like.

Chocolate Layer:

  • In a small bowl, melt the chocolate and coconut oil. Line a baking sheet with parchment paper. Coat the bars one by one in the chocolate and place on the paper. Refrigerate or freeze until chocolate is hard. Serve and enjoy!

Notes

No allergies? Just use regular semi-sweet chocolate to dip bars into. 
Storage: Store these bars in the fridge or freezer to keep firm. We like to make double or triple batches of these bars to have some leftover in the freezer, in a sealed container. They make great grab & go treats, lunch box surprises, or late night cravings.
