No-Butter Gluten-Free Chocolate Chip Cookies

These cookies are LOVED by anyone & everyone! They’re quick, come together in one bowl, & don’t use butter. Each cookie is perfectly chewy, has a slightly crisp edge, and is loaded with gooey chocolate chips. I promise no one will even know they’re gluten-free & butter-free! This recipe can be made allergy friendly with a dairy-free option too!

Notes:
Add-ins: We love to add in coconut flakes, nuts, or dried fruit. We just add during chocolate chips & add the amount we desire.
Gluten & Dairy free: Use dairy free chocolate chips & coconut oil.
Non-allergy: Use all purpose flour, regular butter, and regular chocolate chips.
Gift idea: Add all dry ingredients into a mason jar, one at a time to make layers. Seal & add a cute bow with a tag that has directions for combining the wet and dry ingredients & bake time.

No-Butter Chocolate Chip Cookies
Ingredients
- 1 1/3 cups gluten free flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1 cup rolled oats gluten-free
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1/2 cup coconut oil lightly melted
- 1 tsp vanilla extract
- 3/4 cup chocolate chips dairy-free
Instructions
- Preheat the oven to 350F and grease a cookie sheet.
- In a large bowl or bowl of a stand mixer, combine all the ingredients, except the chocolate chips. Mix until evenly combined. Next, fold in the chocolate chips.
- Form into balls and place on the cookie sheet. Bake for 10 minutes. Once cooked, let sit on the cookie sheet for 1-2 min then transfer to a wire rack to cool. Enjoy the deliciousness!
