Easy Sassy Coleslaw

Ingredients
  

  • 1/2 head green cabbage very thinly sliced (about 1 1/2 lbs)
  • 1/2 head purple cabbage thinly sliced
  • 3 large carrots shredded
  • 1/2 cup cilantro sliced (optional)
  • 1 cup mayonnaise
  • 2 tsp siracha (optional for spicy coleslaw)
  • 6 tbsp lime juice
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • sesame seeds (optional for garnish)
  • green onions sliced (optional for garnish)

Instructions
 

  • Combine all the cabbage, carrots, and cilantro in a large bowl and mix well.
  • In a small bowl, combine the mayo, siracha, lime juice, salt, black pepper, cumin, garlic powder, and onion powder. Mix well.
  • Pour the sauce over the cabbage mixture and toss until evenly combined. Adjust seasonings and siracha to taste. Garnish with green onions and sesame seeds, if using.

Notes

Spicy Coleslaw: Add more siracha to make your coleslaw spicier. If you don't want it spicy, just omit the siracha.
Make ahead option: Prepare and combine all veggies. Then prepare the coleslaw dressing. Store both separately in airtight containers in fridge for up to a week or earlier. When ready to serve, just toss the slaw with the dressing and garnish.
Storage: Stores well in an airtight container in the fridge for up to a week.
