Easy No-Bake Energy Balls

This Easy No-Bake Protein Balls recipe is one of my favorite healthy snacks! Whether you need a quick breakfast on the go, an afternoon pick-me-up, or a post-workout snack, these protein-packed bites are the perfect solution. They're gluten-free and dairy-free, soft, chewy, naturally sweetened, and full of ingredients that will keep you feeling satisfied between meals. I always keep a batch in the fridge because they're the first thing everyone reaches for when hunger strikes!

Ingredients
  

  • 1 1/2 cup whole rolled oats gluten-free
  • 3/4 cup peanut butter (creamy or chunky)
  • 1/2 cup honey
  • 1/2 cup pumpkin seeds (or any seeds you want)
  • 1/4 cup chia seeds
  • 1/4 cup ground flaxseed
  • 1/2 cup coconut flakes, unsweetened
  • 1 tbsp ground cinnamon
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 1-2 scoops protein powder (dairy-free) optional
  • 2/3 cup chocolate chips (we use dairy-free)

Instructions
 

  • In a large bowl, mix together all the ingredients together. The mixture will be thick.
  • Use a 2-tablespoon cookie scoop, spoon, or your hands to scoop the mixture, then use your hands to roll it into balls. 
  • Chill in the fridge for 1 to 2 hours, or until firm. They store in the fridge or freezer well.

Notes

You can double or triple this batch to make extra for the freezer to have on hand. I store these balls in an airtight container in the refrigerator or freezer.
