Grandma's Gluten-Free & Dairy-Free Waffles

Some recipes aren't just about food, they're about memories too. These waffles are exactly that. My mom created these years ago and they're loved by absolutely everyone. They’re perfectly crisp on the outside, soft and fluffy on the inside, and so delicious that no one ever guesses they’re both gluten-free and dairy-free. Plus, they come together in minutes and are perfect for meal prep for those busy mornings.

Ingredients
  

  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1/2 cup applesauce
  • 4 eggs
  • 2 tsp baking powder
  • 3 tsp maple syrup
  • 1 tsp vanilla extract
  • pinch of sea salt

Instructions
 

  • Combine all ingredients together in a medium size bowl & whisk until evenly combined.
  • Pour a little batter into a waffle maker and cook until waffle maker is done. Serve with your favorite toppings!

Notes

Waffle Makers? Our two favorite waffle makers to use are the Cuisinart 4 Slice Belgian Waffle Maker and the Dash Mini Waffle Maker for fun tiny waffles.
Pro Tip: For a super quick fried egg, just crack an egg into the greased mini waffle maker. Trust me...you'll have cooked eggs in a minute without any cleanup!
Batter Add-Ins: For extra protein, just throw a scoop of your favorite protein powder in and a little extra applesauce if the batter is too dry. We also LOVE to add chocolate chips or blueberries to the batter for an extra fun twist.
Some of our favorite toppings:
  • Fresh berries or sliced bananas
  • Pure maple syrup
  • Dairy-free whipped cream & some sprinkles for fun (typically done by my oldest daughter, Riley, who loves adding sprinkles to anything)
  • Peanut butter
  • A sprinkle of powdered sugar
  • Fried chicken
Meal Prep: I like to make a double or triple batch & freeze them in a Ziploc bag. Then, on busy mornings we just pop some in the toaster & we have fresh, delicious waffles!
Storage: We just keep them in a Ziploc bag in the refrigerator then toast them to eat!
