When a chocolate craving hits, sometimes you don’t want to bake an entire pan of brownies because you just want a warm, fudgy dessert right now. That’s where this Fudgy Gluten-Free Brownie Mug Cake makes the perfect treat. This single-serving brownie is rich, chocolatey, and perfectly gooey in the center, only takes a couple minutes to make, and looks adorable in a mug. It has all the delicious flavor of a homemade brownie with almost no work. Plus, this mug brownie is gluten-free, refined sugar-free, and dairy-free with dairy-free chocolate chips.

Ingredients
  

  • 3 tbsp almond flour
  • 1 tbsp tapioca flour
  • 1 tbsp coconut milk
  • 2 tbsp maple syrup
  • 3 tbsp chocolate chips, melted (dairy-free if needed) (+1 tbsp, unmelted, to mix in)
  • 1 tbsp cocoa powder
  • 1 tbsp coconut oil
  • 1 egg yolk
  • pinch of sea salt

Instructions
 

  • Add all ingredients into a mug or ramekin and stir well to fully combine.
  • Microwave mug cake for 90 seconds. Enjoy!

  • Chopped walnuts or pecans
  • Peanut butter swirls
  • A pinch of espresso powder
  • Dairy-free white chocolate chips
  • Caramel drizzle or Dairy-free whipped cream on top
