Chewy Fudgy Gluten-Free Brownies

Wow the crowd with these delicious, chewy & fudgy brownies. They’ll impress anyone food allergies or not because they resemble a box of Ghirardelli brownies!

Ingredients
  

  • 3/4 cup gluten-free flour (see note)
  • 3/4 cuo cacao powder
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 2 1/4 cups sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 1 cup butter or dairy-free (see note)
  • 3/4 cup chocolate chips or dairy-free (see note)

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13 baking pan. In a large bowl, whisk the cocoa powder, flour, salt, and baking powder until combined. Set aside.
  • In a small saucepan, melt the butter until it bubbles. Pour the sugar in & whisk vigorously, about 1 -2 minutes, until well combined. Then remove from the heat.
  • In a stand-mixer bowl or large bowl to use a hand mixer, add the eggs mixing well until they start to foam. Then slowly pour the butter/sugar mixture in while the mixer is running.
  • Once the mixture is combined, stir in the vanilla. Next, stir in the dry ingredients. Now, fold in the chocolate chips, but save 1/4 cup to sprinkle on top later.
  • Pour the batter into your baking pan & sprinkle the chocolate chips on top. Bake for 35-40 minutes or until a toothpick comes out clean. Let cool on a wire rack before slicing.

Notes

Dairy-free? We like to use dairy-free butter like Earth Balance sticks & Enjoy Life dairy-free chocolate chips.
Gluten-Free flours? These brownies work fantastic with Pamela's GF flour blend, King Arthurs 1:1, and Bobs Red Mill GF blend.
Storage: Cover with plastic wrap and keep on counter for up to a week or in fridge for cold brownies.
Some mix-ins we love to add:
  • white chocolate chips or peanut butter chips
  • chopped walnuts, pecans, or sliced almonds
  • marshmallows, shredded coconut, crushed pretzels, or crushed potato chips
  • chopped candy bars
  • dried fruit like cranberries or cherries
  • swirl in peanut butter, cream cheese, jam, or marshmallow fluff before baking
  • Toppings: sprinkle with flaky sea salt, extra nuts, or chocolate chips.
Pro Tip: Toss dried fruits or candy in a little flour before adding to the batter to prevent them from sinking to the bottom.
