Ingredients

  • 1 1/4 cup oats gluten-free
  • 2 1/4 cup chocolate chips (dairy-free or not)
  • 1 1/4 cup coconut flakes shredded
  • 1/4 cup peanut butter (or any nut butter)
  • 1/2 cup Cadbury eggs (or speckled jelly beans, peanut mnms, etc)

Instructions

  • Line a baking sheet with wax paper and set aside.
  • Melt the chocolate in a microwave safe bowl or over low heat using a double boiler. Stir occasionally until smooth.
  • Remove from the heat and add the peanut butter, stirring until combined. Next, add the oats and coconut flakes, mix well.
  • Let the mixture cool just enough to handle.
  • Once cooled enough, shape the mixture into small nests and make a shallow hole in the middle of the nest. Place a few Cadbury eggs (or whatever candy you're using) in the middle and press just slightly to make them stick to the chocolate nest.
  • Let the nests rest on the counter to set or in the fridge.

Notes

Chocolate: You can use dairy-free or regular chocolate chips or melting wafers.
Nut butter: Any nut butter can be used or omitted.
Easy to use-what-you've got: These are any easy and tasty way to use up whatever you've got on hand and customize this recipe with nuts, seeds, dried fruit, cereals, etc. They really are that simple!
Storage: store in an airtight container for up to two weeks or more, but they probably won't last that long. These freeze perfectly too. Just put them in a Ziploc bag after they set.
