Gluten-Free & Dairy-Free Citrus Lemon Bars

Ingredients
  

Crust:

  • 1 1/2 cups gluten-free flour
  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 1/4 tsp sea salt
  • 1 cup butter, cubed into small cubes
  • 1/4 cup water (more or less)

Filling:

  • 1 1/2 cups sugar
  • 1/4 cup almond flour
  • 4 eggs
  • 3/4 cup lemon juice or juice of 4 lemons
  • 1 tbsp cornstarch
  • powdered sugar for dusting

Instructions
 

Crust:

  • Preheat oven to 350F and grease a 9×13 inch pan. If you want a thicker crust, use a 9×9 pan instead.
  • Stir together the flours, sugar, and salt. Add the butter to the flour and cut in with a pastry cutter. Add the water a little bit at a time until the mixture clumps together.
  • Press into the prepared pan and bake until golden brown around the edges about 25-30 minutes.

Filling:

  • Stir the sugar and flour together. Add the eggs and whisk to combine. Next, add the zest and juice mixing until combined. Pour over the crust and bake about 20 minutes.
  • Allow to cool completely in fridge for about 2 hours, then sift powdered sugar over the top before cutting. Store lemon bars in the fridge.

Notes

Gluten free flour: I love using Pamelas GF Flour Blend!
Dairy-free: You can use dairy free butter sticks. We love Earth Balance!
Allergy free? You can sub out all the flour for regular all purpose flour.
